Biodynamic Wickson Crab apples from Anderson Valley, California are hand harvested, crushed, pressed and wild fermented in French neutral oak barrels from naturally present native yeasts. True to Petillant Natural, the base cider is unfined, unfiltered and bottled before primary fermentation is allowed to finish, resulting in a unique petillant cider.

Thought to be a cross between Newtown Pippin and Spitzenberg, Wicksons are often the size of a large crab apple, but unlike their crab counterparts, Wicksons are extraordinarily sweet and spicy with a pronounced acidic tang. They were introduced in Humboldt County, California in 1944 by breeder Albert Etter who named his new variety after Edward J. Wickson, a friend and distinguished California pomologist considered to be “The Father of California Agriculture”. They are one of the few apple varieties native to the state of California
